Onishime - Traditional New Year's Day Dish お煮しめ

This is onishime or stewed vegetables. Onishime or nishime is a traditional Japanese dish for New Year's day. The dish is made of various vegetables but usually (and the one I made) uses the following ingredients:
  • Taro
  • Lotus
  • Burdock
  • Carrot
  • (Dried) shiitake mushroom
  • Konjac 
  • Snow pea
The key to tasty onishime is dashi or dashi broth, which is made from bonito flakes (and dried shiitake mushroom for my recipe). My recipe is very simple. You just cut these vegetables and parboil them and then put all these vegetables and dashi broth in a pot and stew them. After ten minutes or so, season them with sugar, mirin, soy sauce, and salt.   

Onishime tastes bland (in a good way) and is oil-free, so younger people usually don't like it much (and I didn't either), but now, cooking onishime is a kind of seasonal ceremony for me that makes me reflect on what has happened during the year and think about the near year. お煮しめ作りました。毎年ネットでレシピを探すので毎年出来が微妙に違います(ハハハ)。普段は炒め煮することが多いので、油っ気の全くない、薄味の煮しめは新鮮です。子供の頃は全然好きじゃなかったのですが、今ではほぼ毎年作り、作りながら、今年起きたこと、次の年について考えます。皆さん良いお年をお迎えください。そして来年もどうぞよろしくお願いいたします♬
