This is daikon radish simmered with carrots, green beans, deep fried tofu pouch, and maitake mushrooms in a broth of bonito dashi, soy sauce, and mirin (sweet sake for cooking). I always season this kind of dish lightly, i.e., use umami rich dashi a lot, but with as little salt or soy sauce as possible. I don't want to dull my taste buds.

大根とお揚げの煮物です。こういう煮物を作るときいつも心掛けているのは「薄味」。山車はたっぷり使いますが、塩や醤油はなるべく少なめにしています。濃い味は味蕾をだめにするそうです。
