Okonomiyaki (Japanese Savory Pancake) お好み焼き

This is okonomiyaki, a Japanese savory pancake. I used the ingredients below but you can make okonomiyaki using almost any meat, seafood and vegetables you like!! 
  • Batter: white flour, eggs, and water
  • Additional ingredients: pork, cabbage and Japanese onion
  • Toppings: Okonomiyaki sauce, aonori seaweed flakes, and bonito flakes
And I, a lazy person😆, made it as follows:
  • Put everything but the meat into a bowl to make a batter. (This means this okonomiyaki is the Osaka type. See below for details!) 
  • Mix the batter well. 
  • Put meat on a pan and then add a ladle of the batter. (You can make it on a pan!) To flip okonomiyaki without breaking it, don't add too much batter. 
  • Cook it until brown and flip it. 
  • Put the lid on the pan and turn the heat down to low.
  • When the other side browns, flip it again and put bonito flakes and aonori seaweed flakes on it. 
Okonomiyaki can be broadly classified into two types, i.e., Osaka and Hiroshima types. The Osaka type, which is popular in the Osaka area, is cooked by mixing all the ingredients with the batter and cooking the mixture on a pan, while the Hiroshima type is cooked by not mixing but pouring a little of the batter onto the pan and layering each ingredient on the bubbling batter. 

Okonomiyaki is very popular in Japan. You can enjoy both types in Tokyo. My suggestion is to cook yourself, without leaving the most interesting and challenging😁 part, i.e., flipping, to restaurant staff!!

お好み焼きです。実家は広島派なのですが、これは大阪風(バチバチ🔥)です。具材は、小麦粉、卵、水、豚こま、キャベツ、ネギ、かつお節、青のり。作り方は簡単!
  • 豚こまをフライパンに置く。
  • その上に具材を全部入れた生地を置く。
  • 焦げ目がついたらひっくり返す。➡ ここがちょっと難しい😉
  • 蓋をして蒸し焼き。
  • 最後に蓋を開けて強火で焼き目を付ける。
ポイントは小さめに作ること。ひっくり返すときに崩れません!
