This is simmered turnips and deep-fried tofu pouch in bonito dashi broth, seasoned with a little salt, soy sauce and mirin (sweet sake for cooking).
Generally, I don't like greasy foods, so I usually cook with as little oil as possible, and that's why I often use aburaage. Aburaage is literally deep-fried (it can be translated into "fried in oil"), but you can make it less oily by blanching it beforehand.

蕪と油揚げの炊き合わせです。でも京都では炊き合わせのことを「炊いたん」っていうんですよね。カワイイです。ということで、今日は京風ネーミングいたしました。
