You may have heard of Japanese pork miso soup (tonjiru). This is pork soup but not miso but "shiokoji" soup. As usual, it's easy to cook:
You may have heard of Japanese pork miso soup (tonjiru). This is pork soup but not miso but "shiokoji" soup. As usual, it's easy to cook:
- Put water, bonito dashi and shiokoji in a pot and heat it until it boils.
- Add thin slices of pork, carrots and shiitake mushrooms.
- Remove soap scum.
- Add chopped spring onions. Turn off the heat when the onions are cooked.
The soup is nutrient-rich, containing protein, and vitamins A, B and C. You can use chicken stock and salt instead of bonito stock and koji salt, chicken for pork, any mushrooms for shiitake mushrooms. You can add any vegetables, too!

塩麴の豚汁です。豚小間、人参(短冊切り)、シイタケを塩麴入りのだし汁で煮て、煮立ったらネギを入れて終わり。栄養たっぷりです😊。
