Stir-Fried Bitter Gourds, Aburaage and Wakame Seaweed ゴーヤとお揚げとワカメの炒め煮

Today, I got baby bitter gourds AGAIN from the caretaker of a public garden in my neighborhood!! So, I stir-fried them with aburaage (deep-fried tofu pouch) and wakame seaweed! As always it's easy to make:
  • Stir-fry aburaage (deep-fried tofu pouch) with sesame oil in a pan. 
  • When they brown, add thinly sliced bitter gourds.
  • When the gourds soften, add wakame seaweed. 
  • Add mentsuyu, i.e., a Japanese soup base consisting of umami-rich ingredients.
You can make mentsuyu by mixing soy sauce and mirin (1:1) and bonito dashi stock powder. If you’re interested in how I got the gourds, read this post!
