Chicken Breast & Tomato Salad 鶏むねトマトサラダ

I categorized this as a salad, but it's not a usual one, i.e., low calorie but protein rich!! As usual it's easy to cook:
  • Slice chicken breast and sprinkle the slices with salt and grated ginger. 
  • Make a marinade sauce by mixing water (1 cup), sesame oil (1 spoonful), salt (1/2/ table spoonful), sugar (1/2 spoonful), mirin (1 spoonful), chicken stock powder (1/2 table spoonful), grated ginger, and pepper.
  • Coat the chicken lightly in potato starch and boil them. 
  • Put the chicken into the sauce and when cooled, add sliced tomatoes.
  • Cool it further in the fridge. 
It's less hot in Japan but still humid. If you've lost appetite, try this low-calorie & protein-rich salad!
