This is a salad of tomatoes, broccolis, boiled eggs, and last but not least deep-fried eggplants!! I first deep-fried eggplants and put them in a soy sauce and mirin (sweet sake for cooking) broth. The salad has the broth, so it needs no dressing.
I don't like greasy foods, but I don't like oil-free foods, either. So, I usually cook something that contains a little oil (e.g., aburaage) or cook using a little oil. The salad is an example of the latter. The only key point to note is to put the salad in the fridge for at least one hour. The colder, the yummier especially for a humid day, like Japan's rainy season now. (It's so humid!!!😓)

ナスの揚げびたしサラダです。脂っこいものが苦手なので、揚げびたしには他の野菜を合わせてさっぱり食べられるようにしています。蒸し暑いこの季節😓、しっかり冷やしておくとおいしいですよ。
