This is a dish of deep-fried vegetables (i.e., carrots, eggplants, onions, and green peppers) in a broth of soy sauce & mirin (sweet sake for cooking). I always make this at around this time of year to help increase my appetite.
I lose weight in the rainy season because I often lose my appetite because of humidity, but I can eat these vegetables (although fried!)😊. The key is to put these vegetables in the fridge for at least one hour. It's also yummy😋 to eat them with cold somen noodles, i.e., very thin noodles made of wheat flour.

お野菜の揚げびたしです。この季節になるとよく作ります。湿度で食欲なくしてもなぜかこれは食べられるんです。コツはよく冷やすこと。これから冷蔵庫に入れます😊。そうめんと一緒に食べてもおいしいで~す。
