You may think this isn't Japanese food, but many Japanese make this kind of stew at home because it can be used as pasta sauce and then changed to curry! You can make it using any vegetables in the fridge.

I always use vegetables whole, removing as little as possible for better nutrition. For this stew, I used potatoes with skins🥔 (after washing them!) and bell peppers🫑 with the core, seeds and membranes.

豚肉とお野菜をトマトジュースで煮込みました(ニンニク入り)。パスタにも使えるし、味変でカレーにもなるのでよく作ります。お野菜はいつも栄養を考えて丸ごと使います。じゃがいも🥔は皮つき、ピーマン🫑は芯も種も食べます。
